In collaboration with celebrated Pastry Chef and Author Bettina Schormann, culinary students from the SAIT School of Hospitality and Tourism will prepare a four-course showcase of fresh, local, and seasonal dishes served with a side of student success. Join us as we bring academic excellence to life, one course at a time.

    Each spice and herb unlocks a unique story of connection between people, community, and the land. Presented by Club House for Chefs, Chefs Juriaan Snellen and Gabriel Quiroz will guide this interactive session to share where spices come from, what gives spices their flavour, and help you discover unique spice and flavour applications.

    About Chef Juriaan Snellen, Executive Corporate Chef

    As Executive Corporate Chef for McCormick Canada, Juriaan brings a wealth of international experience and a deep passion for flavor. Originally from Europe, Juriaan holds a degree in Hotel Management and a Certified Chef de Cuisine (CCC) designation. His global perspective is enriched by his fluency in five languages and years spent working in fine dining across Aruba and the Benelux region.

    Prior to joining McCormick, Juriaan held Executive Chef roles at Kraft Heinz, Richardson Foods, and Unifine. This diverse background in culinary sales and Caribbean cuisine allows him to bridge the gap between regional tradition and large-scale food service.

    Today, Juriaan collaborates with Marketing and Product Development teams to deliver custom flavor solutions with a "food-first" mindset. By combining the art of culinary creativity with technical science, he helps customers meet the growing demand for food personality and exciting, memorable eating experiences.


    About Chef Gabriel Quiroz, Research Chef

    As a Research Chef for McCormick Canada, Gabriel brings a unique blend of culinary expertise and scientific knowledge to flavor innovation. Originally from Mexico, Gabriel holds a background in Chemical and Processing Engineering, which serves as the foundation for his work in food chemistry. He is a graduate of the Culinary Institute of America, where he earned a bachelor’s degree in Culinary Science.

    Gabriel’s career spans fine dining, large-scale catering, and specialized work in regenerative meat manufacturing. These roles focused on by-product innovation and sustainable development, allowing him to approach product creation from both a technical and creative perspective.

    At McCormick Canada, Gabriel draws on his Mexican heritage to bridge traditional techniques with modern innovation. Inspired by bold profiles like Cholula and regional Mexican cuisine, he focuses on transforming everyday ingredients into elevated flavor experiences through the marriage of culinary art and scientific principles.
